Toppings:
Pierce the potatoes several times with a fork and rub with the olive oil and salt. Place in the air fryer and air fry at 180o for 35-45 minutes, until cooked through. Alternatively bake in the oven at 200o for 50-60 minutes.
To make the filling, heat the olive oil in a pan on medium-low. Add the green peppers and sauté until softened. Add the chicken and mushroom sauce. Cook until the mixture is warm throughout.
Slice open the potatoes and add a knob of butter to each one. Fill each potato with the chicken à la king filling. Top with some grated Gouda, then return to the air fryer at 200o for 4-5 minutes until the cheese is melted.
To serve, top the potatoes with the crispy bacon pieces and chopped parsley.
