Easy Mango Protein Pudding

Ingredients

15 ml gelatine
45 ml water
250 g LANCEWOOD® Lactose Free Low Fat Plain Smooth Cottage Cheese
200 ml LANCEWOOD® Lactose Free Low Fat Plain Yoghurt
150 g mango
5 ml vanilla essence
50 ml sugar , or 5 sweetener sticks
mango slices , to garnish

Method

In a small bowl, add the water and sprinkle over the gelatine. Leave to stand for 5 minutes.

Microwave for 10 seconds, then stir and microwave for another 5 seconds, taking care not to boil it. Set aside to cool to room temperature. 

Add the cottage cheese, yoghurt, mango, vanilla, sweetener and cooled gelatine to a blender and blend until smooth. Pour into 2 bowls and refrigerate for 1 hour or until set. 

Garnish with fresh mango and enjoy!
