Tuna Pasta Salad

Ingredients

250 g fusilli pasta
170 g canned tuna
125 g rosa tomatoes
150 g cucumber
25 g red onion
125 g black olives , pitted
rocket leaves

 

Dressing:

250 g LANCEWOOD® Medium Fat Smooth Cheese and Chives Cottage Cheese
45 ml mayonnaise
juice of half a lemon
salt and pepper

Method

1. Cook the pasta in salted boiling water according to the packaging directions. Drain and set aside. 

2. Cut the tomatoes into quarters, finely dice the red onion, halve the olives and slice the cucumbers into quarters. 

3. To make the dressing, combine the cottage cheese, mayonnaise, lemon juice and seasoning in a bowl. Mix well. Using a mixing bowl, add the pasta, cucumber, tomatoes, lemon juice and cottage cheese.

4. In a separate bowl, mix the pasta, tuna, tomatoes, cucumber, onion and olives. 

5. Add the dressing and mix well until all ingredients and fully coated. Garnish with fresh rocket and enjoy!
